According to ancient Greek myths, this delicate fruit, which was once white, turned red from the love and care of the nymph Ida, the nurse of Zeus. This myth reveals the roots of the scientific name ‘Rubus idaeus,’ or ‘bramble of Ida.’ Originally native to Western Europe, the wild raspberry, cherished in mountainous regions like the Alps and the Vosges, has traveled a long journey to the gardens of the Renaissance, where it eventually secured a prominent place in the 19th-century French culinary scene.

Our ‘Flanboisier’ is not only a celebration of this fruit but also a symbol of healthy indulgence. Emphasizing lightness—utilizing low-fat fromage blanc or skyr and the natural sweetness of ripe bananas and stevia—this recipe offers a dessert that is both nutritious and tempting. The subtle addition of unsweetened applesauce and the aroma of vanilla enhance the flavor without increasing the calories.

Ingredients for Flanboisier:

  • 250 grams of quark (fromage blanc) with 3% fat (0% can also be used or substitute with skyr)
  • 1 large ripe banana (or 2 small ripe bananas)
  • 3 large eggs (or 4 small eggs)
  • 1 container of unsweetened applesauce
  • 30 grams of cornstarch
  • 125 grams of frozen or fresh raspberries (and optionally some blueberries)
  • 15 grams of pure stevia (or 50 grams of sugar and a little honey as an alternative)
  • 1 teaspoon of vanilla extract

Preparation Method:

  1. Preparation: Preheat the oven to 180 degrees Celsius. Mash the banana until smooth.
  2. Mixing: In a large mixing bowl, combine the mashed banana with the quark, eggs, applesauce, cornstarch, stevia (or sugar and honey), and vanilla extract. Mix everything well until you have a homogeneous batter.
  3. Baking Dish: Grease a baking dish with a diameter of 18 to 20 cm and line the bottom with parchment paper. If you are using a silicone baking dish, it does not need to be greased.
  4. Baking: Pour the batter into the baking dish and spread the raspberries (and optionally the blueberries) over the top. Bake the Flanboisier for 50 to 55 minutes in the preheated oven, or until it is set and has a golden-brown color.
  5. Cooling: Allow the Flanboisier to cool in the dish until it reaches room temperature. Then place it in the refrigerator, ideally for a whole night, to set.

Duration and Servings:

  • Preparation Time: About 10 to 15 minutes for mixing the ingredients.
  • Baking Time: 50 to 55 minutes.
  • Cooling Time: At least 1 hour to room temperature, then preferably a night in the refrigerator.
  • Total Time: Approximately 2 hours plus cooling time.

A Flanboisier of this size should be enough for 6 to 8 servings, depending on how large you cut the pieces. This light and fruity dessert is ideal for those looking for a tasty treat without too many calories.

Kir framboise

Ingredients:

  • 1 part raspberry liqueur
  • 4 parts sparkling wine (such as Prosecco or Champagne)
  • Fresh raspberries for garnish

preparation:

  1. Pour the raspberry liqueur into a chilled champagne flute.
  2. Carefully fill the glass with sparkling wine to preserve the bubbles.
  3. Garnish with a few fresh raspberries.
